Responsibilities:
** Operate the Josper charcoal oven safely and efficiently.
** Grill meats, seafood, and vegetables to the required doneness and according to restaurant standards.
** Monitor cooking temperatures, charcoal levels, and timing to ensure consistent results.
** Season, marinate, and prepare products according to recipes and guidelines.
** Ensure all dishes meet quality, taste, and presentation standards before leaving the station.
** Involvement in the preparation of other a la carte dishes
** Prepare the Josper station for service: lighting charcoal, regulating heat, and arranging tools.
** Maintain proper mise-en-place throughout the shift.
** Monitor stock levels and communicate shortages or needs to the Chef or Supervisor.
** Label, store, and rotate all products following food safety rules (FIFO).
** Follow all HACCP and food safety protocols.
** Keep the grill area clean and organized at all times.
** Ensure safe use of charcoal, tools, and high-temperature equipment.
** Clean the Josper oven and station after service according to procedures.
** Coordinate with kitchen staff to ensure smooth service flow.
** Communicate clearly with the Chef regarding cooking times, special requests, or issues.
** Support other stations when needed, maintaining a collaborative team environment.
Experience:
** Previous experience with Josper or charcoal grill cooking (preferred).
** Strong knowledge of meat cuts, temperatures, and grilling techniques.
** Ability to work in a fast-paced environment.
** Good understanding of kitchen safety and hygiene standards.
** Attention to detail and passion for high-quality cooking.
